Currently, I have three lenses: Canon EF 28-135mm f/3.5-5.6 IS USM AF Zoom Wide Angle-Telephoto Lens, Canon EF 50mm f/1.8 and Canon EF 85mm f/1.8 USM Telephoto Lens. What am I missing? Also, which of these would be best to use in a church that is very dimly lit?

The 50mm would be best for dimly lit situations… I don't like getting into people's faces at events, it makes them nervous, but I don't want to be too far away either, so I think the 28-135mm would be the best overall lens.

Many churches don't allow you to use flash during the ceremony so you will need a fast lens. Both the 50mm and 85 mm are pretty fast. You should be able to stand out of the way with the 85 and get good pictures. You'll need to bump your ISO, try to avoid going over 400 though. An alternative to this one if you are in the buying mood, and have some bucks, is the Canon 70-200 F2.8 IS. IS pays for itself in situations where the is low lighting and people don't move around much.
As others have said, at the reception you are in the mix, it's crowded, you can't back up five feet to take a picture because you'll walk on someone. Something like a 17-50 works. Tamron and Sigma both make F 2.8 lens in that size that are better than the non L lenses in that length.
